Y'all, I freakin LOVE pasta! You will come to see that carbs are life here, and you will see plenty of bread, bagel, and pasta recipes. So, we came across this recipe from Masonfit.com and HAD to give it a try and we were not disappointed! If you love garlic, parmesan, and pasta... this recipe is for you!

Who else eats the same 7-8 recipes on repeat? Ugh! A couple weeks ago I was searching Pinterest looking for healthier pasta recipes and came across this gem. There were very few ingredients, that's a plus, and incorporated chicken instead of hamburger/turkey meat! We got ta makin!

Before we get into taste... the recipe calls for you to make the sauce separate and to pour it into the chicken and pasta mixture. This gives me so much damn anxiety anytime this is the way the recipe calls to cook the sauce because I feel like there is not going to be enough sauce. 🤣 There was plenty of sauce! Whew! We also used regular pasta. Eventually we want to make our own noodles... but that day is not today! 🤣 We love to mix up the pasta noodles and do not use spaghetti noodles. They're so freakin boring!

How did it taste?

Holy shiitake mushrooms! This recipe is freakin amazing! There was the perfect amount of sauce for the amount of pasta and chicken made. 🤘🏼 Adding parmesan cheese to the chicken prior to cooking made me a little nervous... and it was worth the try! You could definitely taste it cooked into the chicken. We absolutely loved this and will be making it again. It was a little too spicy for us, so when we make it again we will be reducing the amount of garlic pepper and red pepper put in the sauce. If you like spicy... cook the recipe all the way out. 🔥

Spicy Garlic Parmesan Chicken Pasta

  • 1 lb Boneless, Skinless Chicken Breast Tenderloins, cut into bite size pieces

  • 1 Tbsp Garlic Pepper

  • 2 Tbsp Reduced Fat Shredded Parmesan Cheese

  • 1/4 - 1/2 Tsp Crushed Red Pepper, based on spice preference

  • 1 Tbsp Olive Oil

  • 1 Bag (8.5 oz) Barilla Rotini Ready Pasta, or your choice

  • 15 oz Can Tomato Sauce

  • 2 Tbsp Garlic Pepper

  • 1 Tbsp Granular Sugar Substitute, Stevia or Swerve

  • 1/2 Tsp Crushed Red Pepper, based on spice preference

How to Cook:

  • Mix the garlic pepper, parmesan cheese, and crushed red pepper in a resealable bag or container. Set aside.

  • Add cut chicken to the mixture. Shake or stir until fully covered. Refrigerate for at least 30 minutes, the longer the better.

  • Once the chicken is marinated, heat a skillet - we used cast iron - medium to high heat. (Recipe calls for nonstick cooking spray - we used olive oil)

  • Cook chicken until browned and then reduce to low heat.

  • While chicken is cooking, microwave the ready made pasta. We cooked the pasta on the stove in boiling water... like adults 🤣Just kidding!

  • Mix the tomato sauce, garlic pepper, sugar substitute, and crushed red pepper.

  • Add pasta and sauce mixture to the cooked chicken and stir. Simmer for a few minutes until the sauce is warmed up.

  • Remove from heat and top with optional mozzarella cheese! Yum!

Here's the thing! We did not take any damn photos! We will next be more cognizant of this going forward as we will be adding The Healthy-ish Bish Kitchen with videos of us cooking and talking about these fun recipes we make.
